I made the chocolate chip ginger bar cookies I've been wanting to make for weeks.
They are delicious but SO RICH that a 1" cube is all you reallycan eat without getting sick want.
Then I made some fried things with ground turkey and bacon and bell peppers in egg roll pastry wrappers. They are SO GOOD I have eaten three.
I'm now considering this:
1 package eggroll wrappers
5-6 apples, suitable for cooking
1/2 cup sugar more or less
Spices-- 1 tsp cinnamon, some allspice and nutmeg and ginger
Peel, core, and chop the apples; cook with a half cup of liquid until soft.
Drain liquid and sprinkle the mixed sugar and spices over the apples. Let cool enough to touch.
Wrap the apple mixture in the wrappers and fry in a skillet on medium-high in enough oil to half-cover. Flip at golden brown. Drain and cool.
Makes 20 or so tiny pies.
