This is from BH&G's Hometown Potluck Favorites with my comments.
The original recipe lists amounts for 8 and 4 servings. Here is the 4-serving amount. I accidentally made the 8-serving amount of topping, but only used half. So, it's all good.
3 tbsp sugar
1 tbsp all-purpose flour
1 1/2 tsp cornstarch
Mix these together in a LARGE bowl. You're going to coat the fruit with them, so be sure your bowl is large.
2 1/2 cups frozen peach slices, thawed (I used a whole 1 lb bag)
3/4 cup cranberries (I used about half a 6 oz package, dried)
Toss these gently in the mix to coat them.
2 tbsp butter, melted
1 1/2 tsp lemon juice
Stir these into the fruit mixture.
Layer this on the bottom of an 8 x 8 baking pan. No need to grease it or anything.
The directions say to use another bowl, but they're not doing dishes. Give your bowl a swipe if it looks dirty and then mix:
1/3 cup all purpose flour
1/4 cup packed brown sugar
1/8 tsp baking powder
1/8 tsp baking soda
dash of salt
Then, cut in:
4 1/2 tsp COLD butter
until it forms coarse crumbs.
Sprinkle this topping over the fruit mixture. The recipe says you can then scatter some sliced almonds, but I don't like almonds. If you do, put some of those in too.
Bake on 375 for 50 minutes, or until it's bubbly and the top is golden brown. Serve with ice cream.
