Whole wheat apple cinnamon muffins, trial #1
Ingredients:
1 cup all purpose flour
1/2 cup whole wheat flour (I started with 1/4 but added more to get the right texture)
1/2 cup white sugar (ditto)
1/4 tsp cinnamon, approx (I only have a shaker, three shakes)
2 peeled diced apples, small (two nearly-half-pound apples)
Mix until apples are coated.
2 tbsp butter, melted
1 cup milk
1 large egg
Mix together thoroughly and then stir into dry ingredients until completely combined.
Pour into a baby-muffin pan. Realize that there is about 3-4 muffins' worth remaining batter.
Lick the bowl.
Baking time will probably be the same or longer, because of the wheat flour. (Edit: 25 minutes is what I used.)
